Avocado Asparagus Salad Recipe





Ingredients:
* 2 lb of asparagus
* 2 medium avocados
* Juice and zest of 1 lemon
* 2 tablespoons olive oil
* 1 tablespoon white vinegar
* 1/2 tablespoon of balsamic vinegar
* 2 tablespoons fresh parsley
* 1 tablespoon fresh coriander
* 1 teaspoon of fresh mint
* 1 teaspoon of sugar
* Salt and pepper, to taste

Directions:
1. Trim asparagus and steam until tender and bright green.
2. Remove asparagus and place in cold water. Drain and set aside.
3. Peel the avocados and dice. Combine with the lemon juice and zest, then add to the asparagus.
4. Make the dressing by combining the white vinegar, balsamic vinegar, olive oil, sugar, mint and parsley.
5. Add salt and pepper to taste, then pour over the asparagus.
6. Toss lightly, cool in refrigerator for 1/2 hour before serving.
