Avocado Shrimp Salad Recipe
Ingredients:
* 2 avocados, peeled, pitted and cubed
* 1 small sweet onion (vidalia if available), chopped
* 2 tomatoes, diced
* 1 lb. small (salad) shrimp, cooked
* salt, to taste
* ground black pepper, to taste * juice of 1 large lime (2 tablespoons)
Directions:
1. In a large bowl, mix together avocado, onion, tomatoes and shrimp.
2. Add lime juice, stir and taste. Add salt and pepper as needed.
Makes 4 servings
